A family favorite! We usually call this by the Albanian name, Byrek. But you can also call it Spinach Pie. However you call it, it is delicious! With homemade phyllo dough being key! I learned how to roll out phyllo dough in Greece from my mother in law. So thankful I did because I've been able to pass along that skill to my daughters. This is a very thin dough rolled out into a large sheet, then rolled up and filled with a wonderful mix of spinach, arugula, farmers cheese, dill, egg, milk and olive oil and salt. In the Spring and Summer we love to add fresh green onions from the garden! Baked on our wood fired oven.
